Man and His Symbols, without hesitation, unless you already read Jung comfortably. It was the last project Jung worked on and the only one he wrote specifically for a general audience, with illustrations and chapters from his closest colleagues. Aion is volume nine part two of the Collected Works, an extended study of the self and its symbolism running through alchemy, Gnosticism and Christian history. Aion is a serious book for readers already inside the tradition, and starting there is how people decide Jung is impenetrable.

You have read Jung before and want the developed argument about the self as a psychological centre and the historical symbolism attached to it. The material on the shadow in the opening chapters is compact and clear, and then the book moves into alchemical and historical territory that takes real effort. This is study rather than reading.
You want to understand Jung's ideas well enough to decide what to read next. The chapters on symbols, on dreams and on the individuation process cover the whole framework in ordinary language, and the illustrations are doing genuine explanatory work rather than decorating the page. Most people who go on to read Jung seriously started here.

His central theoretical constructs are not treated as established science by mainstream psychology, because they are not framed in a way that can be tested.
